If I could pinch back on something to slow them down a bit but keep the power, it sure would be nice !
Typically, when you have the jerky movement that you describe it's caused by either one or both of the pintle arms are loose where they clamp to the drive pump control shafts. When they get loose the machine is hard to control in turns with one stick forward and other stick pulled back, kicks like a bucking bronco.
